Ingredients

  • 1 tablespoon olive oil

  • 2 onions, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon chili powder

  • 6 cups vegetable broth

  • 2 (15 ounce) cans hominy

  • 4 tomatoes, diced

  • 1 (4 ounce) can diced green chilies

  • 5 stalks fresh cilantro, chopped

  • Lime juice, to taste

Directions

  • In a large stock pot over medium heat, sauté the onion in olive oil until translucent and softened. Add the garlic and sauté for 3-5 minutes then stir in the chili powder and broth and bring to a boil. Reduce heat and add the hominy, tomatoes, and chilies. Simmer 20 minutes.

  • Garnish with fresh cilantro and a squirt of lime juice before serving.
