Ingredients

  • Cooking spray

  • 2 cloves garlic, minced

  • 1/2 yellow onion, chopped

  • 1/2 cup chopped carrots

  • 2 cups chopped cabbage

  • 3 cups vegetable broth

  • 1 tablespoon tomato paste

  • 1/2 cup green beans

  • 1/2 teaspoon oregano

  • 1/2 teaspoon basil

  • Salt and black pepper to taste

  • 1/2 cup chopped zucchini

Directions

  • Coat a large stockpot with cooking spray and add the garlic, onion, and carrots. Sauté for 5-7 minutes.

  • Add the cabbage, vegetable broth, tomato paste, green beans, oregano, basil, salt and pepper to the pot. Bring to a boil, reduce heat, cover, and simmer for approximately 30 minutes until the cabbage is tender.

  • Add the zucchini and continue simmering 5-10 minutes or until all of the vegetables are tender.
