Ingredients

  • 15 whole-wheat lasagna noodles

  • 2 cups tomato sauce

  • 1/2 cup onions, chopped

  • 1/2 cup mushrooms, canned

  • 2 cups cottage cheese

  • 1 cup mozzarella cheese, shredded

  • 1 ounce parmesan cheese, grated

  • Cooking spray

Directions

  • Preheat oven to 350°F.

  • Boil the noodles until tender following package instructions.

  • Coat an 8- to 10-inch baking dish with cooking spray. Coat the bottom of the baking dish with 1/4 cup of tomato sauce, then top with one layer of noodles. Cover the noodles with 1 cup cottage cheese, 1/2 cup sauce, then 1/2 cup mozzarella cheese.

  • Add a second layer following the same order (1/2 cup tomato sauce, one layer of noodles, 1 cup cottage cheese, 1/2 tomato sauce, then 1/2 cup mozzarella cheese). Top with remaining 1/4 cup tomato sauce.

  • Sprinkle the top of the lasagna with parmesan cheese, and bake for 30-40 minutes. Serve immediately.
