Ingredients

  • 1/2 large sweet potato

  • 1 cup black beans, cooked

  • 1 garlic clove, minced

  • 1/2 onion, chopped

  • 2 fat-free cheese wedges

  • 1 teaspoon cumin

  • 2 tortillas

  • Crushed red pepper flakes

  • Salt

  • Black pepper

Directions

  • Preheat an oven to 400 degrees F.

  • Bake the sweet potato for 1 hour.
