Ingredients

  • 1 cup fresh tomatoes, diced

  • 1 1/2 tablespoons fresh cilantro, chopped

  • 4 fat-free whole-wheat tortillas, 8 inches in diameter

  • 1 cup low-fat refried black beans

  • 1 cup lettuce, chopped

  • 1/2 cup cheddar cheese, finely shredded

  • 1/4 cup reduced-fat sour cream

  • 1/2 cup salsa

Directions

  • Mix the tomatoes and cilantro in a small bowl, and set aside.

  • Place the 2 tortillas between a paper towel, and microwave 20 seconds on high. Repeat with the remaining tortillas.

  • Microwave the refried black beans for 1 minute. Stir well.

  • To serve, spread the black beans on 1 tortilla and add the lettuce, tomato-cilantro mixture, and cheese. Fold the sides and the bottom of the tortilla over the filling, rolling to close. Garnish with sour cream and salsa. Repeat with all the tortillas and serve immediately.
