Ingredients

  • 2 pounds (32 ounces) chicken breasts, boneless and skinless

  • 1 cup salsa

  • 1/2 cup water

  • 1 cup petite diced canned tomatoes, low-sodium

  • 2 tablespoons taco seasoning

  • 1 cup onions, diced fine

  • 1/2 cup celery, diced fine

  • 1/2 cup carrots, shredded

  • 3 tablespoons reduced fat sour cream

Directions

  • In a bowl, combine the tomatoes, onions, celery, and carrots and set aside.

  • Place the chicken in a slow cooker and sprinkle with taco seasoning.

  • Layer the vegetable mixture and salsa on top of the seasoned chicken.

  • Pour the water over the mixture and set the slow cooker on low. Cook for 6-8 hours.

  • The chicken is cooked when it breaks apart easily into shredded chicken.

  • When serving, break up chicken and stir in sour cream.
