Ingredients

  • 1 pound pork tenderloin

  • 1 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/8 teaspoon ground chipotle pepper

  • 2 teaspoons canola oil

  • 1/4 cup apple cider

  • 1 tablespoon maple syrup

  • 1 teaspoon apple cider vinegar

Directions

  • Prepare the pork by trimming the tenderloin and cutting crosswise into 1-inch thick medallions.

  • In a small bowl, combine the chili powder, salt, and ground chipotle. Sprinkle this mixture on both sides of each pork medallion.

  • Heat the oil in a large skillet and cook the pork until golden in color, about 2 minutes per side.

  • When the pork is cooked, add the cider, syrup, and vinegar to the pan. Bring the mixture to a boil then reduce heat to medium.

  • While on medium heat, turn the pork to maintain a coating with the mixture. Continue to cook for 2 minutes, or until the sauce reaches a thick glaze consistency.

  • Remove the pork from the heat and serve with the remaining glaze.
