Ingredients

  • 6 ounces linguine, cooked

  • 1 1/2 cups broccoli, coarsely chopped

  • 1/2 cup sliced carrots

  • 2 cloves minced garlic

  • 1 1/2 tablespoons olive oil

  • 1/4 teaspoon dried oregano

  • 1 1/2 teaspoons lemon zest

  • 1/2 cup lemon juice

  • 1/4 teaspoon basil

  • 1/4 cup honey

  • 1/4 cup sliced zucchini

  • 2 seeded and diced plum tomatoes

  • Salt and black pepper to taste

  • Grated Parmesan cheese to taste

Directions

  • Cook the linguine according to package instructions.

  • Sauté the broccoli, carrots, and garlic in olive oil for about 2 minutes in a frying pan. Add the oregano, lemon zest, lemon juice, basil, honey, and zucchini and continue to cook for 6 minutes on medium to high heat.

  • Turn the temperature to low, add the tomatoes, and cook for another 5 minutes.

  • Add the vegetables to the cooked pasta and top with salt, pepper, and Parmesan cheese.
