Ingredients

  • 2 eggs

  • 2 teaspoons stevia powder

  • 1 tablespoon vanilla extract

  • ½ cup water

  • 1 cup almond flour

  • ½ cup soy flour

  • ½ teaspoon salt

  • ½ teaspoon baking soda

  • 1 tablespoon arrowroot powder

Directions

  • Beat together the eggs, stevia, vanilla and water.

  • Combine the mixture with the almond flour, soy flour, salt, baking soda, and arrowroot powder.

  • Spray a skillet with non-stick spray and heat over medium heat.

  • Pour the batter on skillet in about 3-inch circles.

  • Heat until small bubbles appear or the underside is browned, then flip over and cook until other side is also golden brown.
