Ingredients

  • 2 cups fava beans, shelled

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

  • 1/4 cup yellow onion, minced

  • 1 clove garlic, minced

  • 1/2 cup vegetable stock, chicken stock, or broth

  • 1/4 teaspoon freshly ground black pepper

  • 1 teaspoon fresh parsley, chopped

Directions

  • Bring a large saucepan 3/4 full of water to a boil. Cook the fava beans and 1/4 teaspoon of salt for 2 minutes. Drain and rinse immediately with cold water.

  • Remove the skins by pinching each bean on one side. Remove and discard the skins and set the beans aside.

  • In a large saucepan with a tight-fitting lid, heat the oil over medium heat. Sauté the onion 6 minutes until soft. Saute garlic 30 seconds, then add fava beans and bring to a boil. Reduce the heat, cover, and simmer 15 minutes, shaking the pan gently from time to time.

  • Season with the remaining salt and the pepper. Sprinkle with the parsley and serve immediately.
