Ingredients

  • 1 tilapia fillet (4 ounces)

  • 1 teaspoon olive oil

  • ½ lime

  • ½ tablespoon cilantro, chopped

  • ½ cup spinach, cooked

  • ¼ cup tomatoes, chopped

  • 1 tablespoon Parmesan cheese, shredded

  • ½ teaspoon garlic powder

Directions

  • Coat the fillet with the olive oil. Squeeze the juice of the lime onto the fillet while removing any seeds.

  • Sprinkle the garlic powder and cilantro over the fish.

  • Broil the fillet approximately 6 inches away from heat for 5-7 minutes.

  • When the tilapia flakes easily with fork, remove from the broiler.
