Ingredients

  • 1 1/8 cups dark brown rice, rinsed and drained

  • 2 cups water

  • 3/4 teaspoon salt

  • 1/4 teaspoon turmeric, ground

  • 1/2 teaspoon orange zest, grated

  • 3 tablespoons fresh orange juice

  • 1 1/2 tablespoons canola oil

  • 1/4 cup pistachios, chopped

  • 1/4 cup dried apricots, chopped

Directions

  • Boil rice, water, 1/4 teaspoon salt, and turmeric in a medium pot. Reduce the heat to low, cover, and simmer 45 minutes until the rice is tender and the water is absorbed. Transfer to a large bowl and keep warm.

  • Combine the orange zest and juice, oil, and remaining salt in a small bowl, whisking to blend. Add this mixture to the warm rice, then sprinkle in the nuts and apricots, tossing to mix. Serve immediately.
