Ingredients

  • 3 cups cooked black lentils

  • 4 large eggs

  • 1/2 teaspoon sea salt

  • 1 onion, finely chopped

  • 1 cup toasted whole-grain bread crumbs

  • 1 tablespoon extra-virgin olive oil

Directions

  • Place the lentils, salt, and eggs into the food processor. Puree the mixture; it should remain slightly chunky and runny.

  • Transfer the mixture to a mixing bowl and stir in the onion and bread crumbs. Allow the mixture to sit for a few minutes so the breadcrumbs can absorb some moisture.

  • The mixture should be moist, but water can be added if more moisture is needed. Form into 12 patties.

  • Heat the extra-virgin olive oil in a skillet over low-medium heat. Add 4 patties and cover. Allow the patties to cook for 7-10 minutes or until golden brown. Then flip and cook the other side until golden brown.

  • Remove from the skillet and place on a wire rack to cool. Cook the remaining patties.
