Ingredients

  • 2 pounds boneless, skinless chicken breasts

  • 1 package Italian dressing mix

  • 1/2 cup water

  • 1 8-ounce package low fat cream cheese

  • 1 can 98% fat free cream of chicken soup

  • 3 cups cooked white, long grain rice

Directions

  • Place the chicken breasts in a slow cooker. Add the Italian dressing mix and water, cover, and cook on high for 4 hours.

  • In a separate bowl, combine the cream cheese and soup.

  • Add the cream cheese and soup mixture to the slow cooker and stir gently to shred the chicken.

  • Cook on low until heated thoroughly.

  • Serve over rice.
