Ingredients

  • 1 cup edamame, shelled

  • 2 cups chopped boiled shrimp

  • 1 can cannelloni beans, rinsed and drained

  • 1 cup cherry tomatoes, halved

  • 1-2 tablespoons red onion, chopped

  • 1/2 cup fresh cilantro, chopped

  • 1/3 cup fresh lime juice

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

Directions

  • In a large bowl, mix the edamame, shrimp, beans, tomatoes, and onions.

  • To make the salad dressing, in a separate bowl, combine the olive oil, lime juice, and cilantro until smooth.

  • Pour the dressing over the edamame mixture and gently toss.
