Ingredients

  • 1/2 medium avocado, seeded, peeled, diced

  • 1 cup low-fat cottage cheese

  • 3/4 cup plain, non-fat yogurt

  • 1/2 cup green onions, sliced

  • 1/4 cup carrots, shredded

  • 1 tablespoon fresh lemon juice

  • 1/4 cup non-fat mayonnaise

  • 2 cups broccoli florets

  • 1 cup cucumber slices

  • 28 melba toast

Directions

  • Toss the avocado with the lemon juice and set aside.

  • In a food processor or blender, combine the cottage cheese, yogurt, and mayonnaise until smooth. Add this mixture to the avocado, gently stirring in the onions and carrots. Cover and chill for one hour.
