Ingredients

  • 1 pound lean ground beef

  • 1 1/4 cups low-sodium salsa

  • 3/4 cup oatmeal

  • 1 carrot, shredded

  • 2 plum tomatoes, diced

  • 1/2 cup chopped mushrooms

Directions

  • Preheat an oven to 350 degrees F.

  • Combine all ingredients in a large mixing bowl. Using hands, shape the mixture into a loaf and place in a greased baking pan.
