Ingredients

  • 1 chopped red bell pepper

  • 1 large chopped shallot

  • 1/2 cup honey

  • 1/4 cup golden raisins

  • 1/4 cup apple cider vinegar

  • 1 tablespoon minced ginger

  • 1 tablespoon minced garlic

  • 1 teaspoon cumin

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon red pepper flakes

  • 1 pound coarsely chopped rhubarb

  • Salt and black pepper to taste

  • 1/2 cup chopped cilantro

Directions

  • In a skillet, cook the red bell pepper, shallot, raisins, vinegar, honey, and spices for 5 minutes. Add the rhubarb and continue to cook for 2 minutes. Set aside to cool.
