Ingredients

  • 4 tablespoons olive oil, divided

  • 1 large onion, minced

  • 1 clove garlic, minced

  • 5 potatoes, peeled and sliced thin

  • 6 ounces linguiƧa sausage, sliced thinly

  • 2 1/2 teaspoons salt

  • 3 tablespoons ground black pepper

  • 1 pound kale, rinsed and cut in thin strips

  • Water

Directions

  • Heat three tablespoons of the olive oil in a saucepan. Add the onion and garlic and cook for three minutes. Add the potatoes, stirring constantly for another three minutes.

  • Add four cups of water and bring to a boil. Reduce heat and simmer, covered, for 20 minutes.

  • Cook the sausage in a large skillet over medium heat for 10 minutes or until thoroughly cooked. Drain all fat.

  • Mash or puree the potato mixture in a blender. Add the sausage, salt, and pepper and return to medium heat. When it boils, cover and simmer for five minutes.

  • Just before serving, add the kale and simmer for five minutes until tender. Stir in the remaining olive oil and serve immediately.
