Ingredients

  • 4 salmon fillets (3-ounce each)

  • 1 tablespoon Dijon mustard

  • 1/4 cup bread crumbs

  • 1 ounce pistachios, shelled

  • 1 clove garlic, minced

  • 1 shallot, minced

  • Nonstick cooking spray

  • Salt, to taste

  • Ground black pepper, to taste

Directions

  • Preheat the oven to 425°F.

  • Chop the pistachios in a food processor or with a knife until they are the size of breadcrumbs.

  • Mix the chopped pistachios with the breadcrumbs, garlic, and shallots in a large bowl. When combined, place the mixture on a deep plate.

  • Sprinkle the desired amount of salt and pepper onto the salmon fillets.

  • Evenly spread mustard on one side of the salmon. Coat that same side with the pistachio mixture.

  • Spray a baking sheet with the cooking spray and place the salmon on it.

  • Bake the fish for about 10 minutes, or until the fish is completely cooked. Serve immediately.
