  • 1/4 cup white rice flour

  • 1/4 cup sweet rice flour

  • 1/4 teaspoon xanthan gum

  • 1 teaspoon cream of tartar

  • 1/4 teaspoon salt

  • 3/4 cup sweetener

  • 1 tablespoon vanilla extract

  • 1 teaspoon lemon juice

Directions

  • Beat the egg whites until frothy.

  • Beat in the cream of tartar, salt, sweetener, vanilla, and lemon juice.

  • Combine all types of flour with the xanthan gum and then fold this mixture into the liquid mixture.

  • Pour into cake pan.

  • Bake at 325 degrees F for 50 minutes.
