Ingredients

  • 8 plum tomatoes

  • 1/3 cup chopped fresh basil

  • 1/4 cup shredded Parmesan cheese

  • 2 cloves garlic

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon olive oil, plus additional oil for bread

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 loaf French bread

Directions

  • Preheat the oven 350°F.

  • Wash the tomatoes, and cut each tomato in half. Use a spoon to remove the seeds and dice the tomatoes and add to a mixing bowl.

  • Mince the garlic and chop the basil.

  • Add the basil, Parmesan cheese, balsamic vinegar, and olive oil to the bowl, and toss to mix well.

  • Add the black pepper and salt, and stir to combine the mixture.

  • Slice the French bread into 1/2 inch-thick slices. Arrange the slices on a baking sheet, and brush additional olive oil onto the slices.

  • Place the baking sheet into the oven, and toast until the slices are slightly browned.

  • Serve the bread with the bowl of tomatoes.
