Ingredients

  • 2 tablespoons olive oil

  • 1 shallot, chopped

  • 2 green onions, chopped

  • 1/2 cup garbanzo beans, cooked and drained

  • Salt to taste

  • Black pepper to taste

  • 1 bunch Swiss chard, chopped

  • 1 large tomato, sliced

  • 1/2 lemon, juiced

Directions

  • Heat the olive oil in a large skillet over medium heat and cook the chopped shallot and green onions for 3-5 minutes or until tender.

  • Stir in the garbanzo beans, salt, and pepper and cook for 3-5 minutes. Add the sliced tomato and Swiss chard and keep cooking until the chard begins to wilt, stirring occasionally.
