Ingredients

  • 1 red onion, sliced

  • 1 red bell pepper, sliced

  • 1 eggplant, sliced

  • 2 tablespoons olive oil

  • 1/4 cup fresh parsley, chopped

  • 1/8 teaspoon salt

  • 1 (8-ounce) container plain hummus

  • 4 whole-grain flatbreads

Directions

  • Preheat a grill or grill.

  • Use 1 tablespoon of oil to coat the grate or pan. Cook the onion, bell pepper, and eggplant slices for 5-10 minutes.
