Ingredients

  • 4 green zucchini, sliced

  • 2 yellow summer squash, sliced

  • 8 green onions, chopped

  • 6 cloves garlic, minced

  • 2 teaspoons salt

  • 2 tablespoons olive oil

  • 1 cup feta cheese

  • 1/4 cup fresh basil, chopped

Directions

  • Preheat an oven to 350 degrees Fahrenheit.

  • Combine the zucchini, squash, and onions in a bowl and add the olive oil, garlic, and salt.

  • Arrange the zucchini and summer squash on a greased roasting pan. Sprinkle feta cheese over the vegetables and roast for 25 minutes.

  • Take out of the oven and add chopped basil over the vegetables. Mix well.
