Ingredients

  • 1 tablespoon chia seeds, ground

  • 1 cup whole wheat flour

  • 1/2 cup white unbleached flour

  • 2 teaspoons cinnamon

  • 1/2 teaspoon nutmeg

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 16 ounces canned pumpkin

  • 1/4 cup egg whites

  • 1/4 cup olive oil

  • 1/2 cup agave nectar

  • 1 tablespoon vanilla extract

  • 1/2 cup walnuts, chopped

Directions

  • Preheat an oven to 350°F.

  • Combine the ground chia seeds, whole wheat flour, white unbleached flour, cinnamon, nutmeg, baking soda, and salt together in a bowl

  • Mix the pumpkin, egg whites, olive oil, agave nectar, and vanilla in a separate bowl. Fold this mixture into the dry mixture.

  • Add the walnuts and mix well.

  • Scoop out the combined mixture into muffin liners.

  • Bake for 25-30 minutes, or until an inserted toothpick comes out clean.
