Ingredients

  • 1 pound turkey tenderloins, cut into strips

  • 1 cup buttermilk

  • 1/2 cup yellow cornmeal

  • 1/2 cup all-purpose flour

  • 2 teaspoons and 1/2 cup mustard

  • 1 teaspoon ground cumin

  • 1 teaspoon dried thyme leaves

  • 2 tablespoons canola oil

  • 1 teaspoon salt

  • 1/4 cup maple syrup

Directions

  • Preheat an oven to 450 degrees F.

  • In a large bowl, whisk together the buttermilk and 2 teaspoons of the mustard. Add the turkey tenderloins and coat with the sauce.

  • In another large bowl, combine the cornmeal, flour, cumin, salt, and thyme. Roll the turkey tenderloins in this mixture.

  • Grease a baking sheet and place it in the oven to preheat for 5 minutes. Remove and evenly distribute the turkey tenderloins on this preheated sheet, baking for another 10 minutes or until the bottoms are golden.

  • Rotate the turkey tenderloins and bake for another 10 minutes.

  • Meanwhile, in a small bowl, whisk together the maple syrup and the remaining 1/2 cup of mustard. Serve this sauce alongside the cooked turkey tenderloins.
