Ingredients

  • 1 (15 ounce) can black beans, drained and rinsed

  • 4 large eggs

  • 1/2 cup granulated artificial sweetener

  • 3 tablespoons cocoa powder

  • 2 tablespoons strong coffee

  • 1 teaspoon baking powder

  • 2 tablespoons olive oil

  • 1 teaspoon vanilla extract

  • Cooking spray

Directions

  • Set oven temperature to 350°F.

  • Using cooking spray, coat an 8X8 baking pan.

  • Add all ingredients into a food processor except for the beans and blend.

  • Add the beans and blend thoroughly. Pour brownie batter into the baking pan and bake for 30 minutes or until an inserted toothpick comes out clean.
