Ingredients

  • 1 1/2 cups old-fashioned rolled oats

  • 1/2 cup whole wheat flour

  • 1/2 cup roughly chopped walnuts

  • 1/4 cup semi-sweet chocolate chips

  • 2 tablespoons cinnamon chips

  • 2 tablespoons sweetened coconut flakes

  • 1/4 cup mix of dried berries and cherries

  • 1/4 cup sunflower seeds

  • 1/4 cup brown sugar

  • 2 tablespoons ground flaxseeds

  • 1/2 teaspoon salt

  • 1/4 teaspoons baking soda

  • 1 1/2 cups milk

  • 1 egg

  • 1 teaspoon vanilla extract

Directions

  • Preheat oven to 350°F.

  • Line a 9×13 inch baking dish with parchment, leaving 1″ of parchment on either side of the dish.

  • In a bowl, stir together the ground flax seeds, baking soda, oats, chocolate and cinnamon chips, dried berries, dried cherries, sunflower seeds, whole wheat flour, walnuts, brown sugar, and salt.

  • In a separate bowl, whisk the milk, egg, and vanilla extract until combined.

  • Pour the wet ingredients into the dry ingredients and stir until well combined.

  • Transfer the mixture into the baking dish, and smooth into an even layer.

  • Bake for 30 minutes, or until the bars are set and golden brown.

  • Cool in pan for 10 minutes, then remove with the parchment paper and cut into 10 equally-sized bars.
