Ingredients

  • 2 bell peppers (red, yellow, or orange)

  • 6 slices turkey bacon

  • 3/4 cup shredded reduced fat cheddar cheese

  • 1/4 cup chopped scallions

  • 1/4 cup reduced fat sour cream

Directions

  • Preheat an oven to 350 degrees.

  • Remove the stems and seeds from the peppers and then cut them into quarters.

  • Place the pepper slices on a large, lightly greased baking sheet cut side up. Bake in the oven for 20 minutes or until soft.

  • While the peppers are cooking, cook the turkey bacon in a lightly sprayed pan on medium heat on the stove until crispy. Once it has cooled, chop the bacon into tiny pieces.

  • When the pepper slices are done cooking, remove from the oven and let cool slightly, but leave the oven turned on. Blot away any excess liquid from peppers with a paper towel.

  • Sprinkle the tops of the pepper slices evenly with shredded cheese, scallions, and chopped bacon, the put back into the oven and bake until cheese has melted, approximately 5-10 minutes. Serve with sour cream.
