Ingredients

  • 2 and 1/2 medium sized bananas

  • 1 large egg

  • 1/2 cup applesauce

  • 1 tablespoon stevia or 1/2 cup artificial sweetener

  • 1 cup whole wheat flour

  • 1 cup regular flour

  • 1/4 cup milk, 1%

  • 1/4 teaspoon vanilla extract

  • 2 teaspoon baking powder

  • 3 tablespoon semi-sweet mini chocolate chips

Directions

  • Preheat the oven to 350°F.

  • Unpeel the bananas and place them in a large mixing bowl. With a fork or potato masher, mash the bananas.

  • Add the egg, applesauce, baking powder, milk, vanilla extract, and stevia to the mashed bananas, and stir to combine.

  • Gradually add and stir in both types of flour to the mixture. Then add the chocolate chips.

  • Fill 16 muffin tins with the batter using a spoon or ice cream scoop.

  • Place the muffins in to the oven and bake for 20 minutes. Allow the muffins to cool before serving.
