Ingredients

  • 1 pound potatoes, peeled and cubed

  • 3 cloves garlic, minced

  • 1/2 cup onion, diced

  • 1 teaspoon ground ginger

  • 1/4 cup vegetable broth

  • 1 cup frozen peas

  • 1 teaspoon lemon juice

  • 1 teaspoon ground turmeric

  • 1 tablespoon coriander seeds

  • 1 teaspoon curry powder

  • 16 wonton wrappers

Directions

  • Heat an oven to 350 degrees F.

  • In a pan, sauté the potatoes, onion, garlic, and ginger. Add the vegetable broth and cook for 10 minutes, covered.

  • Add the peas, lemon juice, tumeric, coriander, and curry powder. Stir for a few minutes until the peas are cooked.

  • Evenly place the potato filling on to the wrappers. Fold the wrapper into a triangle shape and use a fingertip to add water and seal the sides.

  • Place on a cookie sheet and bake for 15 minutes or until golden brown.
