Ingredients

  • 1 pound chicken breast, chopped

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 tablespoons fish sauce

  • 2 tablespoons oyster sauce

  • 2 tablespoons sugar

  • 1 tablespoon cornstarch

  • Pinch of black pepper

  • 1/2 cup cashews

  • 1/4 teaspoon red pepper flakes

  • 4 green onions, diced

  • 1/2-1 cup water

Directions

  • In a large bowl, combine the garlic, fish sauce, oyster sauce, sugar, cornstarch, and pepper. Stir well, then coat the chicken breast in this mixture. Marinate in the refrigerator for 30 minutes.

  • Heat the olive oil in a large pan over medium heat. Sauté the cashews and the red pepper flakes for 3-4 minutes. Remove from heat and set aside.

  • In the same pan, cook the marinated chicken in water on medium high heat until cooked through.

  • Stir in the pepper flakes, cashews, and green onions. Cook for a few minutes and serve hot.
