Ingredients

  • 4 cups water

  • 1 cup sugar substitute

  • 4 cups fresh mint leaves, lightly packed

  • 4 cups strawberries, hulled and halved

  • 1 cup lemon juice, freshly squeezed

Directions

  • In a small saucepan, bring 2 cups of water, sugar substitute, and mint to a boil. Reduce the heat and simmer for approximately 10 minutes.

  • Remove from heat, and strain the liquid to remove the mint. Put the liquid into a blender and add 3 cups of. Blend the liquid until smooth and pour into a 2-quart pitcher.

  • Thinly slice the remaining 1 cup of strawberries. Add the strawberries, lemon juice, and remaining water to the pitcher, and stir. Add additional sugar substitute to taste if desired.

  • Cover and put into refrigerator until cold. Serve chilled.
