Ingredients

  • 8 ounces orzo pasta

  • 4 cups baby spinach

  • 2 tablespoons dried capers

  • 8 ounces feta cheese

  • 16 ounces grape tomatoes

  • 1/4 teaspoon black pepper

  • 2 tablespoons Parmesan cheese

Directions

  • Cook the pasta.

  • Mix the spinach, capers, and feta cheese in a large bowl.

  • Remove 1/4 cup of pasta water after the pasta is cooked and before it is drained and add it to the mix of spinach, capers, and feta cheese. Toss to mix.

  • Place the tomatoes at the bottom of the pasta strainer.

  • Strain the pasta over the tomatoes.

  • Mix the pasta and tomatoes with the spinach, caper, and feta cheese mix.

  • Season and garnish with black pepper and Parmesan cheese.
