Ingredients

  • 1 cup black beans, rinsed

  • 1 plum tomato, diced

  • 1 cup fresh corn kernels

  • 2 tablespoons cornmeal

  • 1 pound premade whole wheat pizza dough

  • 1/3 cup barbecue sauce

  • 1 cup shredded mozzarella cheese

Directions

  • Preheat a grill to medium heat

  • Sprinkle the cornmeal onto a large baking sheet. Roll out the pizza dough on top of the cornmeal, making sure to coat the entire underside of the dough.

  • Place on the grill and cook for 4-5 minutes or until the crust is puffed and lightly browned. Using a spatula, flip the crust halfway through cooking.

  • Remove from the grill and spread barbecue sauce evenly over the crust.

  • Combine the tomato, beans, and corn into a medium bowl. Sprinkle this mixture on top of the barbecue sauce, then top with the cheese.

  • Return to the grill and cook until the cheese is melted and the bottom of the crust is brown, about 4-5 minutes.
