Ingredients

  • Cooking spray

  • 1 egg

  • 1 cup low-fat (1%) milk

  • 1/3 cup sugar

  • 2 tablespoons vegetable oil

  • 1/2 cup carrots, grated

  • 1/2 cup raisins

  • 1/2 cup walnuts, toasted

  • 1 teaspoon vanilla

  • 1 1/2 cups flour

  • 1 cup old-fashioned oatmeal

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

Directions

  • Heat the oven to 400°F. With nonstick cooking spray, coat a muffin tin.

  • In one bowl, mix the wet ingredients (egg, milk, sugar, oil, carrots, raisins, walnuts, and vanilla) together.
