Ingredients

  • 1 teaspoon canola oil

  • 1 onion, finely chopped

  • 1 clove garlic, minced

  • 1 jalapeño pepper, seeded and finely chopped

  • 2 teaspoons ground cumin

  • 1 cup cooked black beans

  • 12 ounces 90% lean ground beef

  • 2 tablespoons tomato paste

  • 2 tablespoons fresh cilantro, chopped

  • 1 teaspoon dried thyme

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 4 whole-wheat Kaiser rolls, split and toasted

  • Tomatosalsa, for garnish

  • Shredded lettuce, for garnish

Directions

  • Heat the oil in a small skillet and cook the onion until lightly golden, about three minutes.

  • Stir in the garlic, jalapeño pepper, and cumin and cook for about two minutes. Remove from heat and transfer to bowl. Add the beans and mash with a potato masher. Add the beef, tomato paste, cilantro, thyme, salt, and pepper. Mix until even.

  • Shape the mixture into thick patties and grill until cooked, about five minutes for each side.

  • Place on toasted rolls and use salsa and lettuce as garnish.
