Ingredients

  • 2 cups water

  • 1 package (8-serving size) sugar-free cherry-flavored gelatin

  • ½ teaspoon cinnamon

  • 1 twenty-ounce can pineapple chunks in juice, not drained

  • 8 large ice cubes

  • 1 eleven-ounce can mandarin oranges in juice, drained

Directions

  • In a small sauce pan, bring the water to a boil. Pour the boiling water into a large bowl.

  • Add the gelatin and cinnamon to the water and stir until the gelatin is completely dissolved.

  • Drain the pineapple chunks and save the juice. Add enough ice cubes to the pineapple juice to measure 1½ cups.

  • Add the gelatin mixture to the pineapple juice and stir until the ice is completely melted.

  • Refrigerate the gelatin mixture until it is slightly thickened (about 45 minutes).

  • Place aside ¼ cup each of the pineapple chunks and mandarin oranges. Add the remaining fruit to the gelatin and pour into 1½-quart serving bowl.

  • Refrigerate until firm (about 4 hours).

  • Use the saved pineapple chunks and mandarin oranges for garnishing the chilled gelatin.
