Ingredients

  • 1 pound mushrooms, sliced

  • 1 onion, chopped

  • 1 head of cauliflower, chopped

  • 3 cups cooked brown rice

  • 2 1/2 cups cheddar cheese, shredded

  • 2 tablespoons butter

  • 1 lemon, juiced

  • 3 cloves garlic, crushed

  • 1 teaspoon basil

  • Salt

  • Pepper

Directions

  • Preheat an oven to 350 degrees F.

  • Heat the butter and lemon juice in skillet and sauté the mushrooms. Add the cauliflower, garlic, basil, salt, and pepper, stirring well for about 5-6 minutes.

  • Add the cooked brown rice and cheddar cheese to the sautéed mixture, mixing well.

  • Move the mixture to a casserole dish, cover, and bake for 30 minutes.
