Ingredients

  • 2 cups flour

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1 1/2 sticks unsalted butter

  • 1 1/4 cups dark brown sugar

  • 1teaspoon vanilla extract

  • 1 large egg

Directions

  • Using a mixer, cream the brown sugar and butter on medium speed for 4 minutes or until fluffy.

  • In a separate bowl, whisk all dry ingredients.

  • Add the eggs and vanilla to the mixer and beat for 1 additional minute.

  • Add the dry ingredients to the mixer and mix until a cookie dough forms.

  • Cover the dough with plastic wrap and refrigerate for 30 minutes.

  • Cover a cookie sheet with parchment paper. Drop the dough onto the cookie sheet in the desired size and bake for 10-15 minutes at 350 degrees.

  • Let the cookies cool on the cookie sheet for 5 minutes before removing.
