Ingredients

  • 1 cup cooked quinoa

  • 3 cups cooked black beans

  • 2 large sweet potatoes, shredded

  • 1 cup shredded low fat cheddar cheese

  • 1 tablespoon ground cumin

  • Pinches of salt and black pepper

  • 2 eggs

  • 1 cup salsa

  • 2 tablespoons fresh cilantro, chopped

Directions

  • Begin by heating an oven to 350°F. Prep a 9"x9" casserole dish by spraying it with cooking spray.

  • Combine the quinoa, beans, sweet potatoes, cheddar cheese, and spices in a large bowl. In a smaller bowl, whisk the eggs and salsa. Spread the eggs over the vegetables and pour the mixture into the casserole dish.

  • Scatter the leftover cheese over the top of the casserole and bake uncovered for 30 minutes. As the casserole is cooling, garnish it with cilantro.
