Ingredients

  • 2 cups cooked brown rice

  • 2 cups skim milk

  • 1/2 cup dried cranberries

  • 2 tablespoons light brown sugar

  • 1 teaspoon lemon zest

  • 1/8 teaspoon cinnamon

Directions

  • In a medium-sized saucepan, bring the rice, milk, and cranberries to a boil.

  • Reduce heat and simmer uncovered until the cranberries are softened.

  • Remove from heat and stir in the sugar, lemon zest, and cinnamon. Allow to cool. May be served warm or chilled.
