Ingredients

  • 1 cup oats

  • 2 very ripe bananas, mashed

  • 1 cup walnuts, chopped

  • 1 cup skim milk

  • 1 cup whole-wheat flour

  • 1/2 cup brown sugar

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 packet artificial sweetener

Directions

  • Soak oats in milk for one hour. Meanwhile, preheat oven to 400 degrees Fahrenheit and coat a muffin pan with cooking spray.

  • Combine soaked oats, bananas, egg, and vanilla extract in one bowl. In another bowl, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and sweetener.

  • Slowly add the wet ingredients to the dry ingredients, mixing well. Add walnuts. Spoon mixture into muffin pan.

  • Bake 20 minutes or until a toothpick inserted in muffin center comes out clean.
