Ingredients

  • 1 cup white vinegar

  • ¼ cup lime juice

  • ½ cup water

  • ¼ cup light brown sugar

  • 2 tablespoons yellow mustard seeds

  • 3 papaya, seeded, peeled, and chopped

  • 2 teaspoons curry powder

  • ¼ cup red onion, diced

Directions

  • Put the mustard seeds, light brown sugar, water, lime juice, and white vinegar into a saucepan. Bring to boil and cook for 5-10 minutes.

  • Add the curry powder and papaya to the mixture and cook for 2 more minutes. Remove from heat and stir in the red onion. Pour the mixture in a jar and refrigerate for 1 week before using.
