Ingredients

  • 1 large papaya, peeled, seeded, and sliced

  • 1 lime

  • 1 3/4 cup heavy whipping cream

  • 2 large eggs, beaten

  • 3/4 cup granulated sugar

Directions

  • Add the sugar, eggs, and cream to a saucepan and whisk together. Over low heat, cook the mixture while stirring until it has thickened. Make sure not to boil the mixture. Remove the saucepan from the heat and allow to cool until lukewarm. Stir occasionally.

  • Place the peeled, seeded, and sliced papaya into a blender. Blend for 2-3 minutes. Juice the lime and add it to the blended papaya. Blend again for 2-3 minutes.

  • Add the papaya and lime mixture into the saucepan. Stir in the cream mixture.

  • Freeze in an ice cream maker or chill the mixture over an ice bath until cool then pour the mixture into a plastic bowl. Place the bowl into the freezer for 45 minutes. Remove the bowl and stir the ice cream. Repeat this process every 30 minutes until ice cream is the desired consistency.
