Ingredients

  • 1 pound skinless chicken, diced

  • 2 cups white rice, uncooked

  • 1 pound shrimp, peeled and deveined

  • 1 teaspoon garlic, minced

  • 3 1/2 cups chicken broth

  • 1/2 green bell pepper, chopped

  • 1/4 cup olive oil

  • 1/2 onion, chopped

  • 1 15-ounce can diced tomatoes with liquid

  • 1 cup frozen peas

  • 1 teaspoon paprika

  • 1/2 teaspoon saffron

  • 1/4 teaspoon cayenne pepper, to taste

  • 1/4 teaspoon salt, to taste

  • 1/4 teaspoon black pepper, to taste

Directions

  • Preheat an oven to 375 degrees F.

  • Heat the olive oil over medium heat in a Dutch oven and cook the garlic, onion, and green pepper until the garlic is golden, about 3 minutes.

  • Stir in the chicken, rice, shrimp, chicken broth, bell pepper, tomatoes, peas, paprika, saffron, cayenne, salt, and pepper. Mix well, cover, and place in the oven.

  • Bake for 20 minutes or until the rice is cooked.
