Ingredients

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon dried thyme or 3/4 teaspoon chopped fresh thyme

  • 1 pinch ground nutmeg

  • 1 pinch cayenne pepper

  • 4 boneless skinless chicken breasts (about 1 pound)

  • 2 teaspoons margarine

  • 1 ripe but firm mango, peeled and cut into chunks

  • 2 green onions, thinly sliced

  • Salt, to taste

  • 1/4 cup chopped fresh coriander

  • Juice from 1/2 lime

Directions

  • Mix all the spices (cumin through cayenne) together in a small dish. Sprinkle the spice mixture onto both sides of each chicken breast.

  • Place a large nonstick frying pan over medium-to-high heat, add the margarine, and melt. Place the chicken into the frying pan, and cook for 10-15 minutes or until the meat is fully cooked (no longer pink). While sautéing, turn the chicken intermittenly to ensure even cooking.

  • Next, add the mango and green onions to the frying pan. Cook for another minute.

  • Once fully cooked, remove the skillet from the heat and add the salt, coriander, and a splash of lime juice to the top of the chicken mixture. Serve immediately.
