Ingredients

  • 1/2 cup mango chutney

  • 4 (8-inch) multigrain tortillas

  • 8 ounces low-sodium shaved ham

  • 1/2 cup (2 ounces) crumbled queso fresco

  • 3 tablespoons chopped green onions

  • Cooking spray

Directions

  • Turn on a grill and set to medium-high heat.

  • On one half of each tortilla, evenly spread two tablespoons of mango chutney.

  • On top on the chutney, place an equal amount of ham, cheese, and onion and fold the tortilla in half.

  • Coat the grill rack with cooking spray and add the tortillas.

  • Grill each side for 2-3 minutes. The tortillas should be golden brown and the cheese should melt.

  • Cut the quesadillas into four wedges per tortilla.
