Ingredients

  • 1 tablespoon Cajun seasoning

  • 1/2 teaspoon ground cardamom

  • 1/8 teaspoon ground allspice

  • 2 skinless, boneless chicken breast

  • 3 tablespoons butter

  • 1 cup chopped onion

  • 1 tablespoon minced, peeled fresh ginger

  • 1 cup water

  • Salt and black pepper

Directions

  • Combine the Cajun seasoning, cardamom, and allspice. Rub on each side of the chicken pieces.

  • Add most of the butter to a skillet and cook the chicken. Then in the same pan, cook the remaining butter and onions for 4 minutes. Combine the ginger with the onions and cook for an additional minute.

  • Combine the chicken and water with the onions and ginger and cook on medium heat for about 7 minutes. Remove the chicken and cover. Continue cooking the sauce on high heat for another 7 minutes. Add salt and pepper to taste.

  • Combine chicken and sauce and serve.
